Hozirgi kunda ilmiy maʼlumotlarga asosan sut tarkibida 200 dan ortiq turli xildagi mikroorganizmlardan, aminokislotalar, yog‘ kislotalari, sut qandi yaʼni laktoza, sterinlar, turli xil mineral moddalar, hozirda maʼlum bo‘lgan vitaminlar, pigmentlar, fosfatidlar, fermentlar, gormonlar va normal hayot faoliyatini saqlab borish uchun organizmga zarur bo‘lgan boshqa moddalardan tarkib topgan.Аннотация
Respublikamizda aholi kundalik istemolining 12-14 foizini sut va sut mahsulotlari tashkil etadi. Shu sababdan oziq-ovqat sanoatida sut va sut mahsulotlarini tayyorlash va qayta ishlash sohasi muhim ahamiyatga ega. Bu sohaning ahamiyati va muhimligini aholining iste’mol talabi va istaklari hisobiga savdo shahobchalari peshtoqidagi sut va sut mahsulotlari turlarining xilma-xilligi va serobligidan ko’rish mumkin.
