Abstract

Fermentlar va mikrob hujayralari yordamida biotransformatsiyalar oziq-ovqat hamda ichimliklar ishlab chiqarish uchun asrlar davomida ishlatilgan. Erkin va immobilizatsiyalangan fermentlar hamda mikroorganizmlar turli muhitlarda jumladan, suvli: organik erituvchilar, gaz: qattiq tizimlar, o‘ta kritik suyuqliklar va ionli suyuqliklarda muvaffaqiyatli qo'llanilgan.

Agrokimyoviy moddalar farmatsevtika,xushbo‘y moddalar va oziq-ovqat qo‘shimchalari sifatida ishlatiladigan birikmalar kimyoviy sintez bilan solishtirganda odatda yengil sharoitlarda biotransformatsiya orqali osongina sintezlanishi mumkin. Sanoat jarayonlarida biotransformatsiyalarni qo‘llash tijorat uchun qiziqarli birikmalar ishlab chiqarish uchun fermentlar va mikrob hujayralaridan foydalanish muvaffaqiyatini yanada aniqlaydi.
